Easy coconut cupcakes recipe

1/2 cup flour
1 cup sugar
1/2 tsp baking powder
Pinch of salt
1/2 cup flaked coconut
8 oz butter
1/2 cup sour cream
3 eggs
1 tsp vanilla essence
1/2 tsp coconut essence


Preheat oven on 180 put liners in cupcake tray beat butter and sugar till light and creamy add eggs one by one with essence add flour and sourcream gradually fold in 1/2 of the coconut pour in the cupcake cases bake for 20-25 mins
For icing
4 oz butter
Icing sugar 1 cup
1 tsp vanilla essence
1/2 tsp coconut essence
Beat all the ingredients till thick once cupcake baked bring to room temp
Dip in icing sprinkle remaining half flaked coconut and serve
