CHINESE CHICKEN RECIPE


Ingredients:
Flour 1/4 cup
Egg Whites 3
Crushed Cornflakes 5 cups
Boneless Chicken Breast (cubes) 1/2 kg
Water 1 -2/3 cups
Soya Sauce 1/3 cup
Apricot Jam 1/4 cup
Hoisin Sauce 3 tbsp
Corn Flour 2 tbsp
Balsamic Vinegar 1 tbsp
Oil 2 tsp
Garlic (minced) 4 cloves
Fresh Ginger (grated) 1 tbsp
Red Chilli Flakes 1/4 tsp
METHOD
Spread flour in a shallow dish. Whisk egg whites in another shallow dish. Spread corn flakes crumbs into another plate. Working in batches, dredge chicken in flour, dip in egg whites, then coat with corn flakes, pressing gently to adhere. Shallow fry the chicken in hot oil till done. Meanwhile, whisk water, soya sauce, apricot jam, hoisin sauce, corn flour and vinegar together in a bowl. Heat oil in a pan. Add garlic, ginger, and red chilli flakes and cook until fragrant. Whisk in soya sauce mixture, bring to simmer, and cook until thickened. Remove from heat, set aside. Add cooked chicken and toss to coat. Serve with steamed rice.
