Veggie burger recipe

Cubed potatoes 2
Carrots cubed 2
Finely chopped beans ½ cup
Peas ½ cup
Ginger chopped 1 inch piece
Green chilies chopped 2 -3
Coriander leaves chopped as required
Garam masala 1 tsp
Bread crumbs ½ cup
Salt as needed
Bread crumbs 1 ¼ cup
Chickpea or rice flour ½ cup
For assembling:
Burger buns 4
Lettuce as needed
Tomato 1
Onion 1
For Sauce:
Mayonnaise or yogurt ¼ cup
Extra virgin olive oil 1 tbsp
Lemon juice 1 ½ tsp
Mustard powder ½ tsp
Pepper powder ¼ tsp
Salt a pinch

Steam potatoes and beans until half cooked. Then add the rest of the veggies and steam until just done. They should not be mushy. Mash these well when cooled. Add chilies, ginger, garam masala, salt, mint or coriander. Mix them up well along with bread crumbs or roasted chickpea flour. Make patties and flatten them. Make a batter with chickpea flour or rice flour using enough water. Dip each of these in the batter and then in the bread crumbs. Set them aside for a while. Make a sauce by mixing mayo or yogurt, olive oil, lemon juice, salt and pepper. Mix well. Shallow fry the patties until golden. Drain on a kitchen paper. Slice and toast the burger buns. Place the patties, then the lettuce, onions and tomatoes. Add the sauce. Place the other bun. Serve immediately.
