One Bowl Chocolate Cake recipe

Caster sugar 2 cups
Flour 1-3/4 cups
Cocoa powder 3/4 cup
Baking powder 1-1/2 tsp
Baking soda 1-1/2 tsp
Salt 1 tsp
Eggs 2
Milk 1 cup
Oil 1/2 cup
Vanilla essence 2 tsp
Boiling water 1 cup
To Decorate:
Ganache as required
Seasonal fruit as required
Grease and flour 2 nine inch round pans. In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes with a beater. Stir in the boiling water at the end. Batter will be thin. Pour evenly into the prepared pans. Bake at 175 degrees C for 30 to 35 minutes, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely. When cold sandwich together with chocolate ganache and also apply on sides and top of cake. Decorate with seasonal fruit.
