Basil coconut chicken

Chicken Breast Cubes ½ kg
Curry Powder 2 tsp
Salt 1 tsp
Black Pepper ½ tsp
Red Chili Powder ¼ tsp
Chopped Onion 1
Garlic Minced 5 cloves
Chopped Jalapeno Peppers 2
Oil 1 tbsp
Coconut Milk 1 can
Corn Flour 1 tbsp
Dried Basil 1 tbsp
Grated Ginger 1 tsp
Boiled Rice 2 cups
In the chicken add curry powder, 1/2 tsp salt, pepper and chili powder. Cover and chill for 1 to 2 hours. In pan heat oil, add in onion, basil, garlic and jalapeno and sauté. Add chicken and remaining ½ tsp of salt and cook until done. Combine coconut milk and corn flour, whisk well to combine. Carefully add to pan, whisking vigorously. Cook and stir until slightly thickened and bubbly. Stir in ginger. Serve over rice.
