Aalu Ki Meethai recipe

Potatoes (boiled and skinned) 250 gm
Almond Paste 125 gm
Khoya or 1/2 kg
Milk Powder 3 cups
Sugar 2-1/2 cups
Clarified Butter 1/2 cup
Saffron a pinch
Water 1 cup


1. in a deep pan add sugar and water and cook to make a syrup (till all sugar dissolves )
meanwhile mash potatoes with a fork .do not use chopper
2. add all the dry ingredients mix well with a wooden spoon
3. Add ghee gradually stirring well after each addition
4. Add all the ghee .
5. add saffron (dissolved in a tsp of water )
6. keep stirring till the mixture leaves the sides of the pan
7. spread on a greased platter .
8. cut into diagonal shapes ,and leave for a day or two
9. a crust will form on the surface
